    Just watching Kate Humbles` "Spice Trail" on TV. Wondered if anyone has seen Saffron crocus growing in Tunisia. It would be fascinating to go on a trail around Tunisia to see the fields where the roses are grown that are picked for rose water, I know that some families go each year to pick petals and then make rose water. Also the orange blossoms in season also picked for orange blossom water.
    More also could be made of this along with the Mimosa blossoms as in the South of France where there is a mimosa parade.
    The peach and almond blossom season is also beautiful.

    Yes, fascinating stuff! The vanilla flower is also beautiful-I learnt a lot about these spices and what one can do with them; shame the Mexican vanilla market is dying out.

    This is fascinating theme, imagination of all this smelling miracles -warm exotic natural fragrances, and colours of Tunisia - geraniums growing wildly having 1-2 meters in diameter, those white flowers growing in sand, jasmin flowers - smelling beautifully, oleanders everywhere, smell of the luxurious mint tea and roses of course in first place...

    about spices - which ones are the best?
    probably saffron and cinnamon ... cardamon

    Best smells in the Medina maybe those litttle twists of paper full of a mix of things to put on my little clay pot burner. Spices for me, cardamon.

    but also the small brown stones-like they sell in backyard of souk - imported from Yemen usually - myrha ?
    cardamon is one of my favourite I put it to sweets aswell as to meet dishes.. milk drinks

    Yes, myrh, one of the three gifts.There, was chain of coffee houses when I was a girl called Cardhoma Cafes, think it was also put in coffee.

    A year or so ago we visited the perfume factories of Grasse in France. To make one litre of jasmine essence takes one ton (1000 kilos) of jasmine flowers.

    Has anyone tried saffron tea and is it sold in (UK,Tn,etc) supermarkets?!I didn't even know saffron had a smell and that are different types, let alone 'rogue saffron'( a bit like dodgy powdered class A drugs mixed with ropey stuff!).

    I am alwasy impressed by saffron (never heard about saffron tea), saffron has so little smell I never tasted it , but when added to meal - it changes the taste of the cooked completely

    Try to imagine one ton of Jasmine Blossoms or one ton of any flower incredible. I remember Grasse well Cave and rest of the area, do think Tunisia could do so much in a similar way to develop touristic interest.

    I do like the smell of orange blossom in cakes and i actually prefer it to rose water..
